Ice Cream Kolaches

Ingredients

  • 1 pint vanilla ice cream, thawed
  • 1 pound (4 sticks) butter, softened
  • 2 tablespoons granulated sugar
  • 4 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • Confectioners' sugar

Instructions

  1. Cream together ice cream and butter. Add sugar, then flour, gradually. Form into a ball and refrigerate overnight.
  2. Heat oven to 375 degrees F.
  3. Roll out to 1/4 inch thickness on floured surface and cut into squares. Put small amount of Solo fruit filling in center, overlap and pinch opposite corners.
  4. Bake for 15 to 20 minutes or until lightly browned.
  5. When cool, dust with confectioners' sugar.
