Rolled Oatmeal Cookies

Yield: about 3 1/2 dozen

Ingredients

  • 1 cup butter
  • 1 cup packed brown sugar
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • 3 cups quick-cooking oatmeal
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon baking soda

Instructions

  1. Cream butter and sugar. Add water and vanilla extract, mixing well.
  2. Combine the dry ingredients and add to the creamed mixture.
  3. Chill for 30 minutes.
  4. Shape into two 1 1/2 inch rolls and wrap tightly in wax paper.
  5. Chill for 2 hours or until firm.
  6. Heat oven to 375 degrees F.
  7. Cut into 1/2 inch slices. Place 2 inches apart on greased cookie sheets.
  8. Bake for 12 minutes or until lightly browned.
  9. Remove to wire racks to cool.

Notes

If you prepare extra dough ahead of time and store in the freezer, you can bake cookies as needed without having to mixing new cookies dough. (I store cookie dough in old juice cans. Cut off the other end and push out the cookie dough and slice.)
