Coconut Pecan Macaroons



  • 2 egg whites
  • Dash salt
  • 1/2 teaspoon vanilla extract
  • 2/3 cup granulated sugar
  • 1 1/3 cups flaked coconut
  • 1/2 cup chopped pecans


  1. On high speed of mixer, beat egg whites with salt and vanilla extract until soft peaks form.
  2. Gradually beat in sugar; continue beating until stiff peaks form.
  3. Fold in coconut and pecans.
  4. Drop by rounded teaspoonsful onto greased cookie sheets.
  5. Bake in a 325 degree F oven for about 20 minutes, or until light golden.

Yield: about 1 1/2 dozen cookies
