1 (5 1/2 to 6 1/4 ounce) package buttermilk biscuit mix
1 (2 3/4 ounce) package instant potatoes
1 cup granulated sugar
1/2 cup (1 stick) margarine, melted
1 teaspoon coconut extract
Mix dry ingredients and set aside. Beat egg and slowly add melted margarine and coconut extract.
Combine dry ingredients and egg mixture. Roll into small balls, place on ungreased cookie sheets, and press each ball with a fork. Bake at 350 degrees F for 10 to 15 minutes. Let cool a few minutes before removing from pan.
