Chocolate Lady Fingers

This is another one from My Grandmother's cookbook dated 1944.

Yield: 3 dozen

Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 eggs
  • 1 cup granulated sugar
  • 3 tablespoons cream or milk
  • 3 tablespoons water
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons cocoa
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt

Instructions

  1. Heat oven to 375 degrees F. Oil a ladyfinger tin or a cookie sheet.
  2. Beat egg yolks until thick.
  3. Add the sugar and beat until light and thick.
  4. Add vanilla extract, salt and water.
  5. Sift flour, cocoa and baking powder together and add it alternately with the cream or milk.
  6. Beat the egg whites stiff and fold into batter.
  7. Bake in oiled ladyfinger tins for 10 minutes. If Ladyfinger tins are not available, shape dough into lady finger shapes on the prepared cookie sheet and bake.
