Cocoa Cookies with Almond Drizzle
Yield: 3 1/2 dozen
Ingredients
Cookies
- 1 cup shortening
- 2 cups granulated sugar
- 4 eggs
- 2 teaspoons vanilla extract
- 3 1/2 cups all-purpose flour
- 1 cup baking cocoa
- 2 teaspoons baking soda
- 1 teaspoon salt
Almond Drizzle
- 1/3 cup butter, softened
- 3 cups confectioners' sugar
- 1/3 cup baking cocoa
- 1/4 teaspoon almond extract
- 3 to 4 tablespoons milk
Instructions
Cookies
- Heat oven to 350 degrees F.
- In a large bowl, cream shortening and sugar until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Beat in vanilla extract.
- Combine the flour, cocoa, baking soda and salt; gradually add to creamed mixture and mix well.
- Roll into 1 1/2 inch balls. Place 2 inches apart on ungreased cookie sheets.
- Bake for 13 to 16 minutes or until set.
- Remove to wire racks to cool.
Almond Drizzle
- In a small bowl, combine the butter, confectioners' sugar, cocoa and almond extract. Add enough milk to achieve desired consistency. Drizzle over cookies.
