Coconut Butterballs


These are delicious. Sometimes I toast the coconut.


  • 1/2 cup butter, softened
  • 2 tablespoons confectioners' sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup flour
  • 3/4 cup flaked coconut
  • Extra confectioners' sugar


  1. Combine butter, sugar and vanilla extract. Cream until lightly and fluffy. Add flour and blend. Add coconut, mixing well.
  2. Shape into small balls and place on ungreased baking sheet.
  3. Bake in a preheated 350 degree F oven for about 10 to 12 minutes or until lightly browned.
  4. Roll in additional confectioners' sugar while still warm.
