These are delicious. Sometimes I toast the coconut.

- 1/2 cup butter, softened
- 2 tablespoons confectioners' sugar
- 1/2 teaspoon
- 1 cup flour
- 3/4 cup flaked coconut
- Extra confectioners'
- Combine butter, sugar and vanilla extract. Cream until lightly and fluffy. Add
flour and blend. Add coconut, mixing well.
- Shape into small balls and place on ungreased baking sheet.
- Bake in a preheated
350 degree F oven for about 10 to 12 minutes or until lightly browned.
- Roll in additional
confectioners' sugar while still warm.
