Coconut Butterballs
These are delicious. Sometimes I toast the coconut.
Ingredients
- 1/2 cup butter, softened
- 2 tablespoons confectioners' sugar
- 1/2 teaspoon vanilla extract
- 1 cup all-purpose flour
- 3/4 cup flaked coconut
- Extra confectioners' sugar
Instructions
- Heat oven to 350 degrees F.
- Combine butter, sugar and vanilla extract. Cream until lightly and fluffy.
- Add flour and blend.
- Add coconut, mixing well.
- Shape into small balls and place on ungreased cookie sheet.
- Bake for about 10 to 12 minutes or until lightly browned.
- Roll in additional confectioners' sugar while still warm.
