Coconut Butterballs

These are delicious. Sometimes I toast the coconut.

Ingredients

  • 1/2 cup butter, softened
  • 2 tablespoons confectioners' sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup flaked coconut
  • Extra confectioners' sugar

Instructions

  1. Heat oven to 350 degrees F.
  2. Combine butter, sugar and vanilla extract. Cream until lightly and fluffy.
  3. Add flour and blend.
  4. Add coconut, mixing well.
  5. Shape into small balls and place on ungreased cookie sheet.
  6. Bake for about 10 to 12 minutes or until lightly browned.
  7. Roll in additional confectioners' sugar while still warm.
