Gooey Butter Cookies
Yield: 4 dozen cookies
Ingredients
- 1/2 cup (1 stick) butter
- 1/4 teaspoon vanilla extract
- 1 egg
- 8 ounces cream cheese
- 1 (18.25 ounce) box butter recipe yellow cake mix*
- Nonstick cooking spray
- Confectioners' sugar
Instructions
- Beat the butter, vanilla extract, egg and cream cheese until light and fluffy.
- Mix in dry cake mix.
- Cover and chill for 30 minutes.
- Heat oven to 350 degrees F. Lightly coat a cookie sheet with cooking spray.
- Drop dough by teaspoonsful into a bowl of confectioners' sugar; roll into balls.
- Bake for 12 minutes or until golden brown.
Notes
* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
