Gooey Butter Cookies

Yield: 4 dozen cookies

Ingredients

  • 1/2 cup (1 stick) butter
  • 1/4 teaspoon vanilla extract
  • 1 egg
  • 8 ounces cream cheese
  • 1 (18.25 ounce) box butter recipe yellow cake mix*
  • Nonstick cooking spray
  • Confectioners' sugar

Instructions

  1. Beat the butter, vanilla extract, egg and cream cheese until light and fluffy.
  2. Mix in dry cake mix.
  3. Cover and chill for 30 minutes.
  4. Heat oven to 350 degrees F. Lightly coat a cookie sheet with cooking spray.
  5. Drop dough by teaspoonsful into a bowl of confectioners' sugar; roll into balls.
  6. Bake for 12 minutes or until golden brown.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
