Gooey Butter Cookies 2

Yield: about 24 cookies

Ingredients

  • 1 (18.25 ounce) box Duncan Hines butter recipe cake mix*
  • 1/2 cup (1 stick) butter
  • 1/4 teaspoon vanilla extract
  • 1 (8 ounce) package cream cheese (room temperature)
  • 1 egg

Instructions

  1. Combine all ingredients with electric mixer until well blended. Chill dough for 2 hours.
  2. Heat oven to 350 degrees F.
  3. Roll into walnut size balls. Roll balls in confectioners' sugar.
  4. Bake on ungreased cookie sheet for 10 to 12 minutes.
  5. Dust with confectioners' sugar when completely cooled.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.

Use any flavor cake mix desired. Extras, such as coconut, may be added.
