Gooey Butter Cookies 2
Yield: about 24 cookies
Ingredients
- 1 (18.25 ounce) box Duncan Hines butter recipe cake mix*
- 1/2 cup (1 stick) butter
- 1/4 teaspoon vanilla extract
- 1 (8 ounce) package cream cheese (room temperature)
- 1 egg
Instructions
- Combine all ingredients with electric mixer until well blended. Chill dough for 2 hours.
- Heat oven to 350 degrees F.
- Roll into walnut size balls. Roll balls in confectioners' sugar.
- Bake on ungreased cookie sheet for 10 to 12 minutes.
- Dust with confectioners' sugar when completely cooled.
Notes
* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
Use any flavor cake mix desired. Extras, such as coconut, may be added.
