  • 1 cup finely chopped walnuts
  • 1/2 cup finely chopped dates
  • 1/2 cup packed brown sugar
  • 1 cup flaked coconut, divided
  • 1 egg


  1. In a bowl, combine the walnuts, dates and the brown sugar. Add 1/2 cup of the coconut and the egg. Mix well.
  2. Shape into 1-inch balls. Roll in the remaining coconut. Place on greased baking sheets.
  3. Bake at 350 degrees F for 12-13 minutes or until lightly browned.
  4. Remove to wire racks to cool.

Yield: about 1 1/2 dozen cookies
