Holstein Crinkles

Yield: 6 dozen

Ingredients

• 2 cups granulated sugar
• 1/2 cup vegetable oil
• 4 squares unsweetened chocolate, melted and cooled
• 2 tablespoons vanilla extract
• 4 eggs
• 2 cups all-purpose flour
• 2 tablespoons baking powder
• 1/2 tablespoon salt
• 1 cup miniature semisweet chocolate chips
• 3/4 to 1 cup confectioners' sugar

Instructions

1. Combine the sugar, oil, chocolate and vanilla extract.
2. Add eggs one at a time, beating well after each.
3. Combine the flour, powder and salt; gradually add to chocolate mixture and beat until smooth. Stir in chocolate chips.
4. Cover and refrigerate for 4 hours or until easy to handle.
5. Heat oven to 350 degrees F. Grease cookie sheets.
6. Roll dough into 1 inch balls, then roll in confectioners' sugar. Place on prepared cookie sheets.
7. Bake for 10 to 12 minutes or just until set.
