Mint Surprise Cookies

Yield: about 2 1/2 to 3 dozen large cookies


  • 3 cups sifted all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 unbeaten eggs
  • 2 tablespoons water
  • 1 teaspoon vanilla extract
  • Walnut halves
  • Foil wrapped chocolate mint wafers


  1. Cream butter, sugar, brown sugar and blend in eggs, water and vanilla extract. Add sifted dry ingredients.
  2. Cover and refrigerate for at least 2 hours.
  3. Enclose each wafer in about 1 tablespoon of chilled dough. First press down small piece of dough on cookie sheet, then place mint on top of pressed dough. Top mint with more dough, press flat, and seal edges. Place on greased cookie sheet 2 inches apart. Place a walnut half on top of each cookie if you wish.
  4. Bake for 10 to 12 minutes at 375 degrees F.
