Potato Chip Cookies

Yield: about 28 to 30 cookies

Ingredients

  • 1/2 pound (2 sticks) butter
  • 1/2 cup granulated sugar
  • 1 1/4 cups all-purpose flour
  • 1 cup crushed plain salted potato chips
  • 1/2 cup chopped nuts (walnuts or pecans)
  • 2 tablespoons confectioners' sugar

Instructions

  1. Cream butter. Slowly add in sugar and beat until light in color and texture. Add flour gradually. Add potato chips and nuts, blending well.
  2. Chill dough for about 30 minutes or until dough is firm enough to shape.
  3. Heat oven to 325 degrees F. Lightly grease or line a cookie sheet with parchment
  4. Shape into balls, approximately 1 to 1 1/2 inches in diameter. Place on prepared cookie sheet. Flatten cookie with fork dipped in cold water.
  5. Keep dough chilled until ready to bake.
  6. Bake for 17 to 20 minutes or until slightly browned.
  7. When cookies are cool, sift confectioners' sugar over top.
