Snow-Covered Almond Crescents

Yield: about 4 dozen cookies

Ingredients

  • 1 cup butter, softened
  • 3/4 cup powdered sugar
  • 1/2 teaspoon almond extract or vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt (optional)
  • 1 cup Quaker Oats (quick or old-fashioned, uncooked)
  • 1/2 cup finely chopped almonds
  • Additional powdered sugar

Instructions

  1. Heat oven to 325 degrees F.
  2. Beat butter, powdered sugar and almond extract until fluffy.
  3. Add flour and salt, mix until well blended. Stir in oats and almonds.
  4. Using level measuring tablespoonsful, shape dough into crescents.
  5. Bake on an ungreased cookie sheet for 14 to 17 minutes or until bottoms are light golden brown.
  6. Remove to wire rack.
  7. Sift additional powdered sugar generously over warm cookies.
  8. Cool completely.
