Special K Cookies


  • 4 cups Kellogg's Special K cereal, crushed to make 1 1/2 cups
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup margarine, softened
  • 2/3 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract


  1. Heat oven to 375 degrees F.
  2. Stir in together 1 cup of the crushed Kellogg's Special K cereal, flour, baking powder and salt. Set aside.
  3. In a large mixing bowl, beat margarine and sugar until light and fluffy. Add egg and vanilla extract. Beat well. Add flour mixture. Mix until well combined.
  4. Portion dough using a round measuring teaspoon. Shape into balls. Roll in the remaining 1/2 cup crushed cereal. Place about 2 inches apart on ungreased baking sheets.
  5. Bake at 375 degrees F for about 10 minutes or until lightly browned.
  6. Remove immediately from baking sheets.
  7. Cool on wire racks.

Yield: about 4 dozen
