Apricot Nut Balls
Ingredients
- 2/3 cup butter
- 1/2 cup apricot preserves
- 1/4 teaspoon lemon juice
- 3/4 cup shredded coconut
- 2 cups quick cooking oats
- Finely ground nuts
Instructions
- Beat butter until creamy.
- Add apricot preserves and lemon juice.
- Stir in coconut and oats.
- Shape into balls and roll in finely ground nuts.
- Keep refrigerated.
