Cowboy Beans and Rice

Ingredients

  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 1 medium size green bell pepper, chopped
  • 3 cups cooked rice
  • 2 (15 to 16 ounce) cans pinto beans, drained and rinsed
  • 3/4 cup barbecue sauce

Instructions

  1. Heat oil in large skillet over medium-high heat until hot.
  2. Add onion and green pepper, cook and stir for 3 to 5 minutes or until tender.
  3. Add rice, beans and barbecue sauce. Simmer for 5 to 7 minutes or until thoroughly heated.

Yield: 4 servings

Add 1/2 pound sliced smoked sausage or 4 sliced frankfurters for a meaty main dish.
