Cowboy Ranch Stew
Ingredients
- 1 tablespoon fat
- 1 pound ground beef
- 1 medium onion, chopped
- 1 green bell pepper, diced
- 2 cups whole kernel corn
- 2 cups canned kidney beans
- 2 cups canned tomatoes
- 1 teaspoon chili powder (optional)
- 3/4 teaspoon salt
Instructions
- Put fat into heavy kettle. Add beef, onion and bell pepper. Cook, stirring occasionally until meat is browned and onion and green pepper are tender.
- Drain corn, beans and tomatoes.
- Add liquids to meat and cook until liquid is reduced to one half.
- Add corn, beans, tomatoes, chili powder and salt. Mix together and heat to serving temperature. Stir occasionally to prevent sticking.
- Serve at once.
