Gingered Shortribs

Yield: 6 to 8 servings

Ingredients

  • 4 pounds beef short ribs
  • 2 tablespoons vegetable oil
  • 2 onions, sliced
  • 1 cup dry red wine
  • 1/2 cup ketchup
  • 6 tablespoons light brown sugar
  • 3 tablespoons vinegar
  • 1/2 teaspoon powdered ginger
  • 4 cloves garlic, minced
  • 1/2 cup beef broth
  • Salt and pepper to taste

Instructions

  1. Brown short ribs in hot oil in skillet or in slow cooker if it has a browning unit. Place sliced onions at bottom of slow cooker. Place ribs on top. Mix all other ingredients in a bowl and pour over ribs.
  2. Cover pot; set at LOW and cook for 6 to 8 hours or until meat is tender.
  3. Add salt and pepper during last hour. If there is excessive sauce, turn pot to HIGH and cook, uncovered, for an additional 30 minutes.
