Deluxe Carrot-Pineapple Johnny Cake



  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 cup granulated sugar
  • 1/4 cup shortening
  • 1 cup buttermilk
  • 1 egg
  • 2 cups shredded carrots
  • 1 cup crushed pineapple


  1. Cream sugar and shortening together; add egg, buttermilk and dry ingredients, then add carrots and pineapple.
  2. Place in greased and floured slow cooker baking pan.
  3. Cover and cook on HIGH for 2 to 3 hours.
