Deluxe Carrot-Pineapple Johnny Cake
- 1 cup all-purpose flour
- 1 cup cornmeal
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 cup granulated sugar
- 1/4 cup shortening
- 1 cup buttermilk
- 1 egg
- 2 cups shredded carrots
- 1 cup crushed pineapple
- Cream sugar and shortening together; add egg, buttermilk and dry
ingredients, then add carrots and pineapple.
- Place in greased and floured slow cooker baking pan.
- Cover and cook on HIGH for 2 to 3 hours.
