Pineapple Pork Roast
- 1 (5 pound) pork roast, browned well
- 1 onion, sliced
- 1 red bell pepper, coarsely chopped
- 1/4 cup brown sugar, not packed
- 1 can crushed pineapple
- 1 tablespoon tomato paste
- Couple splashes of soy sauce
- Pepper, to taste
- Pinch of ground ginger
- Put all ingredients into a slow cooker.
- Cook all day on LOW.
- Serve with hot, cooked rice.
