Roast Lemon Chicken


  • 1 to 3 pounds chicken breasts
  • 1 tablespoon crumbled dried oregano
  • 2 cloves garlic
  • 2 tablespoons butter
  • 1/4 cup water
  • Salt and pepper
  • 3 tablespoons lemon juice

  1. Wash chicken and pat dry.
  2. Season with salt and pepper.
  3. Sprinkle half the oregano and garlic inside the cavity.
  4. Melt butter in a large skillet.
  5. Brown chicken on all sides.
  6. Transfer to slow cooker.
  7. Sprinkle with remaining oregano and garlic.
  8. Add water to skillet and stir to loosen brown bits.
  9. Pour into slow cooker.
  10. Cover and cook on LOW for 8 hours.
  11. Add lemon juice the last hour of cooking.
