Slow Cooker Recipes
Loaded Potato Soup
Served in a regular bowl or in a bread bowl, it's the same very delicious soup.
Ingredients
- 8 russet potatoes, diced
- 1/2 onion, diced
- 1 can cream of chicken soup
- 1 (32 ounce) box chicken broth
- 1 (8 ounce package cream cheese
- 2 cups Cheddar cheese, divided
- 10 to 16 ounces bacon
- Shredded Cheddar, sour cream and sliced green onion (garnish)
Instructions
- Add potatoes, onion, soup, broth, cream cheese and 1 cup Cheddar cheese to slow cooker. Stir.
- Cook on HIGH for 3 to 4 hours.
- Fry bacon, crumble, and add about 40 minutes before done.
- Add remaining 1 cup Cheddar cheese about 25 minutes before done.
Notes
You can reserve some of the crumbled bacon for the top of each serving, if desired.
