Mexican Black-Eyed Peas

Ingredients

  • 1 bag black-eyed peas*
  • 1 can Ro*Tel or fresh diced tomatoes
  • Water to cover
  • Garlic, minced
  • Onion, diced
  • Salt pork, bacon, ham or sausage
  • Jalapeños, sliced

Instructions

  1. Clean beans, then add to slow cooker along with the Ro*Tel or tomatoes.
  2. Add remaining ingredients, and let cook on LOW overnight.

Notes

* You can use any dried beans in this recipe.
