Pizza Potatoes 2



  • 6 medium potatoes, peeled and thinly sliced
  • 1 large onion, thinly sliced
  • 1 tablespoon olive oil
  • 1 ounce sliced pepperoni
  • 1/4 pound grated, low fat mozzarella cheese
  • Salt and pepper to taste
  • 8 ounces pizza sauce


  1. In a large skillet, sauté potato slices and onion in oil until onion becomes transparent, stirring constantly to prevent browning or sticking; drain well.
  2. Combine potatoes with onion, pepperoni, cheese, salt and pepper in slow cooker.
  3. Pour pizza sauce over top.
  4. Cover and cook on LOW for 6-10 hours.

Yield: 6 servings
