Dutch Apple Cake

Yield: 50 (2 inch square) pieces

Ingredients

Cake

  • 2 1/2 cups margarine
  • 6 cups granulated sugar
  • 6 eggs
  • 2 tablespoons vanilla extract
  • 10 cups all-purpose flour
  • 4 tablespoons baking powder
  • 2 teaspoons salt
  • 6 cups water

Topping

  • 3 cups sliced apples
  • 6 cups granulated sugar
  • 3/4 cup all-purpose flour
  • 3/4 cup margarine
  • 2 tablespoons cinnamon

Instructions

  1. Heat oven to 350 degrees F. Spray baking pans well.
  2. Place margarine and sugar in a large mixing bowl. Cream on medium speed until smooth and free of lumps.
  3. Sift together flour, salt and baking powder.
  4. Add eggs and vanilla extract to creamed mixture. Gradually add sifted dry ingredients, and water.
  5. Pour mixture into the prepared baking pans. Put apples on top of batter.
  6. Mix flour, sugar and margarine until a cornmeal type consistency. Sprinkle over apples. Sprinkle with cinnamon.
  7. Bake at 350 degrees F for 35 minutes or until center is done.
