Beef Burritos
Yield: 100 servings
Ingredients
- 8 pounds 10 ounces raw ground beef (no more than 24% fat)
- 2 ounces dehydrated onions
- 10 ounces garlic powder
- 1 tablespoon + 1 teaspoon black pepper
- 3 pounds 8 ounces tomato paste
- 3 quarts water
- 1/4 cup + 2 tablespoons chili powder
- 1/4 cup ground cumin
- 2 tablespoons paprika
- 2 tablespoons onion powder
- 6 pounds 6 ounces Cheddar cheese, shredded
- 100 flour tortillas
- 1 pound 10 ounces Cheddar cheese, shredded (optional)
Instructions
- Brown ground beef, drain. Add onions, garlic powder, pepper, tomato paste, water and seasonings. Blend well. Simmer for 30 minutes.
- Combine shredded cheese with meat mixture. Steam tortillas for 3 minutes or until warm. Portion meat mixture with a 1/3 cup scoop onto each tortilla. Fold around meat envelope style. Place folded burritos seam side down on lightly oiled sheet pans (18 x 26 x 1 inches), 33 to 35 burritos per pan.
- Bake in a conventional oven at 375 degrees F for 15 minutes or in a convection oven at 325 degrees for 15 minutes.
- Sprinkle shredded cheese (optional) evenly over burritos before serving.
