Huevos a la Mexicana



  • 40 eggs, beaten
  • 1 quart oil
  • 1 cup nacho cheese sauce


  1. Cook eggs in heated oil. Place scrambled eggs in stainless steel bowl. Add warm nacho cheese sauce to eggs and mix well. Place in steam table pan.
  2. Serve or hold on steam table.

Serves 50.
