Round Steak


  • 32 pounds round steak
  • 1 pound all-purpose flour
  • 1 1/2 pounds fat
  • 3 pounds onion, peeled and chopped
  • 2 pounds celery, chopped
  • 6 pounds 9 ounces tomato puree (a No. 10 can)
  • 2 gallons beef stock
  • 5 ounces salt
  • 2 teaspoons pepper


  1. Cut round steaks into 100 servings. Dip into flour and brown in the fat.
  2. Sauté onions and celery in fat.
  3. Combine other ingredients and pour over steak pieces.
  4. Bake in 350 degrees F oven for 3 hours or longer.

Serves 100.
