Scrambled Eggs for 100



  • 200 eggs
  • 16 teaspoons salt
  • 2 pounds butter
  • 20 cups milk


  1. Beat eggs.
  2. Heat milk and salt. Add eggs and butter to milk. Do not stir. Put into 2 large roasters.
  3. Bake at 350 degrees F for 1/2 hour, then stir.
  4. Bake for another 1/2 hour, then stir again. Serve immediately.

You can stir in 2 pounds chopped ham after eggs have cooked 1/2 hour, if desired.
