Broccoli Casserole



  • 10 pounds frozen broccoli, uncooked
  • 2 (50 ounce) cans cream of mushroom soup
  • 10 cups raw rice
  • 2 (50 ounce) cans cream of chicken soup
  • 3 pounds sliced or shredded processed cheese


  1. Spread broccoli in roaster, steam table pans or 6 casseroles.
  2. Sprinkle rice over top.
  3. Spoon on mushroom soup, then chicken soup.
  4. Top with sliced or shredded processed cheese.
  5. Bake covered at 325 degrees F for 2 hours.

Serves 65.
