Candied Sweet Potatoes
- 40 to 50 pounds sweet potatoes
- 1 tablespoon cinnamon, or to taste
- 1 tablespoon
nutmeg, or to taste
- Juice of 5 lemons
- 3 pounds margarine
- 5 pounds granulated
- Chopped pecans
- Boil potatoes in jackets until fork tender.
- Cool, skin and slice into casserole
- Sprinkle with cinnamon, nutmeg and lemon juice.
