Sweet Potato Balls

Ingredients

  • 12 pounds cooked sweet potato
  • 1 cup melted margarine
  • 4 cups brown sugar
  • 1 1/2 cups melted margarine
  • 50 pecan halves
  • 4 teaspoons salt
  • 2 teaspoons grated orange rind
  • 16 cups corn flakes, crushed

Instructions

  1. Mash potatoes until light and fluffy.
  2. Add seasonings.
  3. Cool and shape into small balls around a marshmallow.
  4. Dip balls into melted margarine and roll in crushed corn flakes.
  5. Top with a pecan half and bake for 7 to 8 minutes at 450 degrees F.
