Island Banana Bake


  • 3 ounces cream cheese
  • 1/4 cup brown sugar
  • 1/4 cup rum
  • 3 tablespoons half-and-half
  • 1/8 teaspoon cinnamon


  1. Mix cream cheese, brown sugar, rum, half-and-half and cinnamon.
  2. Slice 2 1/2 bananas into a 1-quart casserole.
  3. Dot with margarine.
  4. Spread with one-half of the cheese mixture.
  5. Slice another 2 1/2 bananas and put into the casserole.
  6. Spread again with cheese mixture.
  7. Bake uncovered for 20 to 25 minutes at 325 degrees F.
