Peach Marshmallow Dessert

Ingredients

  • 2 tablespoons shortening
  • 1/4 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1 egg, beaten
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 2 canned peach halves, drained
  • 1 tablespoon butter
  • 1/3 cup brown sugar
  • 1 teaspoon cinnamon
  • 8 large marshmallows

Instructions

  1. Thoroughly cream shortening, sugar and corn syrup. Add egg and beat well.
  2. Sift flour, baking powder and salt.
  3. Add alternately with milk.
  4. Pour into a greased 8 x 12 inch pan.
  5. Arrange peach halves, cut side up, on top of batter.
  6. Blend butter, brown sugar, and cinnamon and sprinkle over peaches.
  7. Bake at 350 degrees F for 40 minutes.
  8. Remove from oven.
  9. Place marshmallow on each peach half.
  10. Return to oven to brown slightly.
