Retro Pineapple Dessert Squares

Crumb Crust



Instructions

  1. Filling: Combine sugar and flour in saucepan; mix well.
  2. Add orange rind and butter.
  3. Gradually stir in pineapple; cook, stirring constantly until mixture thickens; cool and set aside.
  4. Crumb Crust: Combine sugar, oats, flour, baking soda and salt; mix well.
  5. Stir in softened butter or margarine; set aside 1 cup crumb mixture.
  6. Pat remaining mixture evenly in greased 11 x 7-inch pan; spread cold filling over crust.
  7. Top with reserved crumb mixture.
  8. Bake in 350 degree F oven for 40 minutes. Cool.
  9. Cut into 12 squares.
  10. Serve plain or with sweetened whipped cream.
