Rhubarb Pancake Dessert

Ingredients

Rhubarb Mixture

  • 1 cup sugar
  • 1/3 cup pancake mix
  • 1 teaspoon lemon juice
  • 3-4 cups cut-up rhubarb

Top Layer

  • 3 /4 cup pancake mix
  • 2 /3 cup sugar
  • 1 beaten egg
  • 1/4 cup butter, melted

Instructions

  1. Rhubarb Mixture: Mix ingredients and put into a 9-inch square pan.
  2. Top Layer: Blend first three ingredients until crumbly and put on top of rhubarb mixture.
  3. Drizzle butter over top.
  4. Bake for 60 minutes at 350 degrees F.
