Rhubarb Pancake Dessert
Ingredients
Rhubarb Mixture
- 1 cup sugar
- 1/3 cup pancake mix
- 1 teaspoon lemon juice
- 3-4 cups cut-up rhubarb
Top Layer
- 3 /4 cup pancake mix
- 2 /3 cup sugar
- 1 beaten egg
- 1/4 cup butter, melted
Instructions
Rhubarb Mixture
- Mix ingredients and put into a 9-inch square pan.
Top Layer
- Blend first three ingredients until crumbly and put on top of rhubarb mixture.
- Drizzle butter over top.
- Bake for 60 minutes at 350 degrees F.
