Rhubarb Pancake Dessert

Ingredients

Rhubarb Mixture

  • 1 cup granulated sugar
  • 1/3 cup pancake mix
  • 1 teaspoon lemon juice
  • 3 to 4 cups cut-up rhubarb

Top Layer

  • 3 /4 cup pancake mix
  • 2 /3 cup granulated sugar
  • 1 beaten egg
  • 1/4 cup butter, melted

Instructions

Rhubarb Mixture

  1. Mix ingredients and put into a 9 inch square pan.

Top Layer

  1. Blend first three ingredients until crumbly and put on top of rhubarb mixture.
  2. Drizzle butter over top.
  3. Bake for 60 minutes at 350 degrees F.
