Rhubarb Squares

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup sifted confectioners' sugar
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 3/4 teaspoon baking powder
  • 2 large eggs, beaten
  • 3 cups (about 3/4 pound) diced rhubarb

Instructions

  1. Heat oven to 350 degrees F. Lightly grease a 13 x 9 inch baking pan.
  2. Combine 1 cup flour and confectioners' sugar; cut in butter with pastry blender until mixture resembles coarse meal.
  3. Press mixture evenly into the prepared pan.
  4. Bake for 12 minutes. Do not turn off the oven.
  5. Combine sugar, 1/4 cup flour, and baking powder; add eggs, and mix well.
  6. Stir in rhubarb, and pour over prepared crust.
  7. Bake for 45 to 50 minutes.
  8. Cool and cut into squares.
