Rhubarb Surprise

Ingredients

• Fresh rhubarb, diced
• 1/2 cup granulated sugar
• 1 (18.25 ounce) box strawberry cake mix
• 1 cup chopped walnuts
• 1 cup (2 sticks) butter, melted

Instructions

1. Fill a 13 x 9 inch baking dish half full of chopped rhubarb.
2. Sprinkle with sugar.
3. Spread dry cake mix over the top.
4. Sprinkle with walnuts.
5. Drizzle butter over all.
6. Bake at 350 degrees F for 45 minutes to 1 hour.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16 ounce boxes. To compensate for the volume loss, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe.
