Strawberry Soufflé

Ingredients

  • 1 cup mashed strawberries
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon vanilla extract
  • 3 egg whites (room temperature)

Instructions

  1. Heat oven to 350 degrees F. Grease 4 ramekins.
  2. Beat the egg whites to stiff peaks, taking care not to deflate the egg whites.
  3. Fold in the strawberries, sugar and vanilla extract.
  4. Bake until puffed, about 10 to 12 minutes.
