Creamy Blueberry Bread Pudding

This bread pudding really lives up to its name. It is creamy and delicious!

Creamy Blueberry Bread Pudding

Ingredients

Pudding

  • 1 Loaf Rhodes Frozen Bread Dough, baked following instructions
  • 3 eggs
  • 3 cups whipping cream
  • 1 1/2 cups sugar
  • 3 teaspoons vanilla extract
  • 2 cups fresh or frozen blueberries
  • 1/2 (10 to 12 ounce) package white baking chips

Sauce

  • 1/2 cup whipping cream
  • 1/2 (10 to 12 ounce) package white baking chips

Instructions

  1. Cut cooled bread into 1 inch cubes.
  2. In a large bowl beat eggs.
  3. Add cream, sugar and vanilla extract and blend.
  4. Fold in blueberries and baking chips.
  5. Add mixture to bread cubes and fold until cubes are evenly coated.
  6. Pour into a sprayed 9 x 13 inch baking pan. Let sit 15-30 minutes while bread soaks up mixture.
  7. Bake at 350 degrees F 50 to 60 minutes (cover with foil last 15 minutes if necessary to prevent over browning).
  8. Let stand for 5 minutes before serving.
  9. Top with sauce to serve.
  10. To make sauce, heat whipping cream until just starting to boil and pour over chips. Stir until smooth and all chips are melted.
  11. Serve over warm pudding.
