Brandied Pineapple


  • 4 pineapple slices
  • 1/4 cup vinegar
  • 2 tablespoons brown sugar
  • 2 tablespoons brandy
  • 1 cinnamon stick


  1. Simmer pineapple slices in a mixture vinegar, brown sugar, brandy and cinnamon stick for 10 minutes. Chill.
  2. Cut into chunks, if desired, and serve as a fruit accompaniment with ham, pork or chicken.
