Gingered Pineapple

Ingredients

  • 1 cup sour cream
  • 1/4 cup honey
  • 3 tablespoons finely chopped crystallized ginger
  • 1 large fresh, ripe pineapple

Instructions

  1. Stir together sour cream and honey in small bowl; stir in crystallized ginger. Set aside.
  2. Cut pineapple from the bottom through the crown, first in half, then in quarters. Cut away the core strip, leaving the crown on. Loosen fruit by cutting close to the shell with a thin sharp knife. Cut loosened fruit crosswise, then cut lengthwise once or twice to make bite-size pieces. Leave pineapple in shell or place in a serving bowl.
  3. Spoon ginger mixture over pineapple.
  4. Refrigerate until ready to serve.
