- 3 1/2 cups sliced canned pineapple
- 1/3 cup light corn syrup
- 2 cups granulated
- Drain and reserve juice from pineapple.
- Add sugar and corn syrup to juice. Stir
and bring these ingredients to a boil in a large, heavy pan.
- Add the fruit, but
do not crowd it. Simmer until the fruit is transparent.
- Lift pineapple from syrup.
- Drain it on racks until thoroughly dry.
- Place between
sheets of wax paper and store tightly covered.
