Maple Poached Pineapple
- 1/4 cup pure maple syrup, plus more for serving
- 3 tablespoons rum, optional
- 16 ounces fresh pineapple chunks
- 1/2 cup plain low-fat yogurt
- Combine maple syrup and rum in a heavy non-reactive saucepan over medium high
heat. Bring to a boil.
- Add pineapple and simmer 2 minutes.
- Stir and simmer another
2 to 3 minutes or until pineapple is tender.
- Serve poached pineapple with maple syrup and yogurt.
