Maple Poached Pineapple
1/4 cup pure maple syrup, plus more for serving
3 tablespoons rum, optional
16 ounces fresh pineapple chunks
1/2 cup plain low-fat yogurt
Combine maple syrup and rum in a heavy non-reactive saucepan over medium high heat. Bring to a boil.
Add pineapple and simmer 2 minutes.
Stir and simmer another 2 to 3 minutes or until pineapple is tender.
Serve poached pineapple with maple syrup and yogurt.
