Maple Poached Pineapple



  • 1/4 cup pure maple syrup, plus more for serving
  • 3 tablespoons rum, optional
  • 16 ounces fresh pineapple chunks
  • 1/2 cup plain low-fat yogurt


  1. Combine maple syrup and rum in a heavy non-reactive saucepan over medium high heat. Bring to a boil.
  2. Add pineapple and simmer 2 minutes.
  3. Stir and simmer another 2 to 3 minutes or until pineapple is tender.
  4. Serve poached pineapple with maple syrup and yogurt.
