Bing Cherry Sorbet


  • 2 cans pitted dark sweet Bing cherries
  • 4 tablespoons fresh lemon juice


  1. Freeze unopened can of cherries until solid, about 18 hours.
  2. Submerge can in hot water for 1 to 2 minutes.
  3. Open and pour syrup into a food processor bowl.
  4. Place fruit on a cutting surface and cut into chunks.
  5. Add to bowl and puree until smooth.
  6. Add lemon juice and process until blended thoroughly.
  7. Cover and freeze until ready to serve, up to 8 hours.

Makes approximately 3 cups.
