Caramel Tiramisu-Filled Cream Puffs

Fluffy tiramisu mascarpone cheese filling is swirled with ribbons of caramel and sandwiched in tender pastry. Serve them with brunch or dinner; they are fit for any special menu.

Caramel Tiramisu-Filled Cream Puffs

Yield: 12 cream puffs

Ingredients

Pastry Puffs

  • 1 cup water
  • 4 tablespoons butter, cubed
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 large egg yolk
  • 2 tablespoons milk

Caramel Tiramisu Mascarpone Cream

  • 1 cup heavy whipping cream
  • 1/2 teaspoon granulated sugar
  • 1/4 teaspoon vanilla extract
  • 1 (8 ounce) container BelGioioso Tiramisu Mascarpone cheese
  • 1/2 cup salted caramel topping
  • Confectioners’ sugar

Instructions

Pastry Puffs

  1. Heat oven to 375 degrees F. Line a large baking sheet with parchment paper. Set aside.
  2. Bring the water, butter and salt to a boil in a large saucepan over medium heat. Reduce heat to low.
  3. Add flour; stir vigorously until mixture pulls away from the sides of pan, about 1 minute.
  4. Remove from the heat. Let stand for 5 minutes.
  5. Add eggs, one at a time, beating well after each addition. Continue beating until dough is smooth and glossy. Transfer dough to a pastry bag; insert a 3/4-inch plain tip. Pipe dough in rounds (about 1/4 cup each) on prepared pan.
  6. Whisk egg yolk and milk; brush over puffs.
  7. Bake for 35 to 40 minutes or until golden brown and firm. Let cool on pan for 5 minutes before removing to a wire rack.
  8. Cut a small slit into each puff, allowing steam to escape. Cool completely.

Caramel Tiramisu Mascarpone Cream

  1. Beat cream in a large bowl until it begins to thicken. Add sugar and vanilla extract; beat until stiff peaks form.
  2. Beat mascarpone in another large bowl until smooth.
  3. Fold in whipped cream.
  4. Add caramel; gently fold in to create ribbons of caramel.
  5. Slice tops off the puffs. Gently push down pastry inside each puff. Spoon or pipe mascarpone filling over bottoms; replace tops.
  6. Dust with confectioners’ sugar.

Notes

Recipe Tips: If using unflavored mascarpone, sweeten whipped cream with 3 tablespoons confectioners’ sugar in place of the sugar, adding vanilla extract as directed.

For traditional cream puffs similar to the Wisconsin State Fair, fill puffs with sweetened whipped cream.

Cheesemonger Tip: BelGioioso Tiramisu Mascarpone cheese has added coffee and sugar; this creamy cheese would also be yummy spread on warm bagels, pancakes and muffins.
