Baked Rice Pudding
- 1/2 cup uncooked rice
- 3 cup milk
- 1/4 cup granulated sugar
- 1/4 cup raisins
- 1/2 teaspoon grated lemon zest
- 1/2 teaspoon cinnamon
- A grating of fresh nutmeg
- Combine all ingredients in a 2-quart ovenproof casserole or baking dish.
- Bake in a preheated 350 degrees F oven, stirring occasionally, until the rice is tender
and the milk has been absorbed, about 2 1/2 hours.
- Serve warm or chilled.
