Baked Rice Pudding


  • 1/2 cup uncooked rice
  • 3 cup milk
  • 1/4 cup granulated sugar
  • 1/4 cup raisins
  • 1/2 teaspoon grated lemon zest
  • 1/2 teaspoon cinnamon
  • A grating of fresh nutmeg


  1. Combine all ingredients in a 2-quart ovenproof casserole or baking dish.
  2. Bake in a preheated 350 degrees F oven, stirring occasionally, until the rice is tender and the milk has been absorbed, about 2 1/2 hours.
  3. Serve warm or chilled.

Serves 4 to 6.
