Cranberry Pudding with Butter Sauce

Ingredients

Pudding

  • 1 1/4 cups all-purpose flour, sifted
  • 2 teaspoons baking soda
  • 1/4 cup molasses
  • 1/3 cup hot water
  • 2 cups raw, whole cranberries

Butter Sauce

  • 1 cup granulated sugar
  • 1/2 cup butter
  • 1/2 cup light cream or half-and-half

Instructions

  1. Pudding: Sift dry ingredients and stir in molasses. Pour hot water into mixture and blend. Stir in cranberries. Sprinkle in a few chopped nuts. Batter will be stiff. Pour into an 8-inch square greased pan.
  2. Bake at 350 degrees F for 30 minutes.
  3. To serve, top with Butter Sauce or whipped cream.
  4. Butter Sauce: Cook until thoroughly dissolved and hot. Remove from heat and pour over pudding.
  5. Refrigerate any left over sauce.
