Cranberry Pudding with Butter Sauce

Ingredients

Pudding

  • 1 1/4 cups all-purpose flour, sifted
  • 2 teaspoons baking soda
  • 1/4 cup molasses
  • 1/3 cup hot water
  • 2 cups raw, whole cranberries

Butter Sauce

  • 1 cup granulated sugar
  • 1/2 cup butter
  • 1/2 cup light cream or Half-and-Half

Instructions

Pudding

  1. Sift dry ingredients and stir in molasses. Pour hot water into mixture and blend. Stir in cranberries. Sprinkle in a few chopped nuts. Batter will be stiff. Pour into an 8-inch square greased pan.
  2. Bake at 350 degrees F for 30 minutes.
  3. To serve, top with Butter Sauce or whipped cream.

Butter Sauce

  1. Cook until thoroughly dissolved and hot. Remove from heat and pour over pudding.
  2. Refrigerate any left over sauce.
