Hawaiian Coconut Pudding (Haupia)

Serve this easy Hawaiian Coconut Pudding after a full-flavored barbecued meal. Sometimes this is made softer like a custard. This particular recipe, which I prefer, is more like jelly squares. Use a fork, your fingers or chopsticks to eat the Haupia. There is no one correct way.

Hawaiian Coconut Pudding

Yield: 16 servings

Ingredients

  • 1 (12 ounce) can full fat coconut milk
  • 5 tablespoons granulated sugar
  • 5 tablespoons cornstarch
  • 1 1/2 cups water

Instructions

  1. Lightly grease an 8 inch square pan; set aside.
  2. Put coconut milk into a saucepan and bring a boil on low heat.
  3. In a bowl, combine sugar and cornstarch.
  4. Add water; blending well.
  5. Add cornstarch mixture to coconut milk.
  6. Stirring frequently with a wire whisk, cook over medium heat until mixture thickens.
  7. Continue cooking until mixture starts to get translucent, and leaves the sides of the pan.
  8. Pour into prepared pan.
  9. Chill until firm.
  10. Cut into 2 inch squares.
